About Vanillin. Vanillin is a phenolic aldehyde which is slightly soluble in water and soluble in oxygenated solvents and aromatics. It has the macroscopic appearance of white, crystalline needles and has a sweetish, vanilla-like odor. About 12000 t are produced per year and about 20 t originate from natural sources.
Chemical Formula. C8H8O3
Commercial Grades. technical grade; United States Pharmacopeia (USP) grade; and Food Chemical Codex (FCC) grade.
Uses. Vanillin is mainly used in the production of perfumes, flavorizers, and pharmaceuticals. It is also employed as electroplating brightening agent; laboratory reagent; medicinal excipient; masking agent in cosmetics; and ripening agent.
- Guaiacol + glyoxylic acid (carbonyl addition/oxidation/decarboxylation)
- Sulfite pulp waste liquor (air oxidative cleavage)
Derivatives. L-dopa; methyldopa; and vanilic acid.
