About Ethylvanillin. Ethylvanillin is an organic compound, very similar to vanillin, with an extra carbon (methoxy group becomes ethoxy). It consists of a benzene ring, with a formyl, ethoxy and hydroxyl groups, in positions 1, 2 and 4 respectively. Ethylvanillin is a white crystal solid, with vanilla odor and taste. It is soluble in most organic compounds and slightly soluble in water. Its main application is in the food industry.

Commercial Grades. Ethylvanilin is available in National Formulary (NF) and Food Chemical Codex (FCC) grades.
Uses. Ethylvanilin is used mainly as flavoring agent and antioxidant.
- Guethol + glyoxylic acid (carbonyl addition/oxidation/decarboxylation).
Derivatives. Ethylvanilin is used as raw material in the production of Isovanillin.
