About Methional. Methional (a.k.a. 3-Methylsulfanylpropanal, 3-(Methylmercapto)propionaldehyde, MMP) is a naturally ocurring component produced by the decomposition of methionine. In nature, it is found in asparagus, baked potato, tomato and pumpkin. Its primary industrial application is as an intermediate in the production of methionine. It is a relevant contributor to the aroma of various curstaceans. At low concentrations, its odor reminds potato aroma.
Methional Uses. The uses and applications of Methional may vary according to its specification. The main forms of Methional are food grade (FG,98% minimum purity).
